So our week-01 begins with the most soothing color- BLUE
Anthocyanin- Such a big word right?
Don't you worry, bigger the word easier the meaning .
Anthocyanins is a pigment which provides food with it's extremely beautiful colors, RED [ Aidic Conditions] and BLUE[ Alkaline conditions ] . As our color for this week is blue, i would love to elaborate for the same.
Even though blue as a color signifies relaxation and serenity to many, in terms of food people are little hesitant about consuming a blue color dish. Why so ?
From ages, the concept of actually eating a blue color chicken? sounds so weird!
I Know right ! that's exactly why blue color food is not very popular, but wait!
We Definitely have blue color beverages. Beverages are liquids that a guest would love to have for refreshment along with joy and relaxation. They can be classified into basic two types-
1. Alcoholic Beverages
2.Non-Alcoholic Beverages
HISTORY OF BLUE DRINKS
'Blue was created out of coal tar' is what Briars explains, further his research claims that, this craze of original blue drinks dates back to Victorian England, Circa 1850, when the affinity of aritifical colors- particularly royal purple- dervied from the arctiles likes clothings to edibles.
One such astonishing ingredient that has become increasingly popular in giving the blue color to alocholic and non-alcoholic beverages is the BLUE CURACAO.
Let's go a ride to see what the history of CURACAO looks like!
CURACAO is an island which is located in Caribbean sea, an attempt by the Spanish people who once ruled the island, in growing sweet oranges landed them in making this mesmerizing drink.
As the attempt of growing sweet oranges failed due to climatic conditions, the result was having oranges which turned green and were bitter to taste. Smart enough the Spanish People started to extract oils from the peels of the oranges and eventually the Liqueur came into existence, locally known as Laraha.
The history of the liqueur having it's blue color is still a mystery to many, however many co-relate it with the island.
I think that's quite Enough for the History, let me take you through two recipes of very basic yet classic beverages of Blue.
BLUE HAWAIIAN COCKTAIL
Inventor- Harry YEE
INGREDIENTS
1 cup crushed Ice
1/4 cup pineapple juice
2 tablespoon Light rum
2 tablespoon Curacao liqueur
2 tablespoon cream of coconut
1 pineapple slice
1 cherry [ maraschino ]
METHOD
1. Combine crushed ice, pineapple juice, cream of coconut, rum and blue curacao in a blender and make a smooth puree on high speed.
2. Pour it in a highball glass and garnish with pineapple slice and cherry.
GLASS USED- 1. Hurricane glass
2. Highball glass
- Garnish generally has cocktail umbrella, pineapple slice or cherry.

BLUE LAGOON MOCKTAIL
Inventor- Andy MacElhone
INGREDIENTS
15ml Blue Curacao Syrup
30ml Lemon Juice
125ml sprite
Crushed Ice
METHOD
- Add crushed Ice to the glass so that the glass becomes chill.
-Add blue curacao syrup and lemon juice, later add the sprite and give a stir.
-If you prefer a sweeter version you can add the blue curacao a little bit extra.
GLASS USED- 1. Hurricane glass
2.Highball glass
3. Martini glass
- Garnish for this mocktail can be a lemon slice or wedge, cherry or orange slice.
